Ingredients
  

  • 4 salmon fillets 5-6 ounces each, preferably wild-caught
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic minced
  • 1 lemon zest and juice
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper
  • 2 cups cherry tomatoes halved
  • 1 medium red onion thinly sliced
  • 1 bell pepper red or yellow, chopped
  • ½ cup kalamata olives pitted
  • ½ cup artichoke hearts quartered
  • ¼ cup feta cheese crumbled
  • 2 tablespoons capers drained
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • Fresh herbs parsley, dill, or basil
  • Lemon wedges

Instructions
 

  • "Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper. Pat salmon fillets dry with paper towels and place them in the center of the prepared sheet pan, skin-side down. In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Brush the mixture generously over the salmon fillets. In a medium bowl, combine cherry tomatoes, red onion, bell pepper, olives, artichoke hearts, and capers. Add olive oil, lemon juice, minced garlic, salt, and pepper, tossing gently to coat. Arrange the vegetable mixture around the salmon fillets. Place the sheet pan in the oven and bake for 12-15 minutes, until the salmon is cooked through. Remove from the oven and let it rest for 2-3 minutes. Garnish with fresh herbs and serve with lemon wedges.
